In terms of symbolism, the cornflower is surrounded by much folklore and mythology. In the 19th century, this was the âblue flowerâ of Romanticism, symbolising desire, love and the metaphysical search for the infinite. To date, it is the symbol of many countries and organisations. In gardens, it is a favourite flower of pollinators.
